  • Medium-temperature α-amylase is extracted from bacillus subtilis by deep fermentation, and is widely used in beer, monosodium glutamate, starch sugar, alcohol, fermentation industry liquefaction, printing and dyeing desizing, feed, juice processing, baking and other industries.
Product principle
  • It can hydrolyze the α-1,4-glucosidic bond in the starch molecule, arbitrarily cut short-chain dextrins of varying lengths and a small amount of low-molecular-weight sugars, and both amylose and amylopectin are decomposed in a random manner , So that the viscosity of starch paste drops rapidly, that is, "liquefaction" effect, so it is also called liquefaction enzyme.
Features
  1. Temperature range: the effective temperature range is 35-90℃, and the optimum temperature range is 60-70℃.
  2. pH range: effective pH range 4.5-8.0, optimum pH range 5.2-6.2.3, the influence of metal ions on enzyme activity: calcium ions can improve enzyme stability, without calcium ions, enzyme activity is completely lost, except In addition to Ca2+, Mn2+ and Mg2+ also significantly promote the activity of the enzyme.
Storage
  • Enzyme preparations are biologically active substances. Strong light and high temperature will cause enzyme inactivation. Avoid sunlight and rain during transportation and storage.
  • Get wet and store in a cool and dry environment below 25°C. Store at low temperature (temperature at 5-10℃) for 3 months, the enzyme activity shall not be lower than the label value.
